Try some of our Winter Favourites

SPICED HOT CHOCOLATE

Chocolate is good for you; try this delicious Spiced Hot Chocolate

INGREDIENTS:
  • 2 cups of whole full cream milk or almond milk
  • 2 tablespoons of raw cocao powder
  • 1 tablespoon of grated 80% chocolate 
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon freshly ground turmeric
  • 1/4 teaspoon ground ginger
  • 1 tablespoon raw honey
​METHOD:
Add all ingredients, except milk, to a glass jug; add a little milk and stir briskly to combine to a smooth texture.  Heat or froth the milk and add to the chocolate and mix well to be fully combined.  Pour into mugs and sprinkle with a little grated chocolate or dust with cocao powder.  Serves 2.


DELICIOUS VEGETABLE CURRY

INGREDIENTS:
  • ​1 - 2 tablespoons extra virgin oil
  • 1∕2 tsps cumin seeds ground
  • Pinch cinnamon, pinch of salt
  • 1 tsp turmeric 
  • 2 tsps hot curry powder
  • ​fresh chilli if you desire
  • 1 large onion diced 
  • 2 garlic cloves crushed
  • 500 grams of ripe diced tomatoes
  • 400 mls of water
  • ​1 cup coconut milk
​Vegetables from your garden or what you have on hand, such as:
  • 2 large zucchinis
  • 1/4 of a cabbage and/or silverbeet leaves
  • 1/2 Pumpkin or sweet potato
  • 1 heaped cup of cauliflower florets + broccoli
  • 1 large carrot
  • Capsicum strips
Taste test spices at end and adjust as desired
Add rice or soba noodles if desired
METHOD: 
Puree the tomatoes with 400ml of water. Heat oil in pan or wok, add cumin seeds and spices. When they sizzle, add chopped onion and cook until lightly browned. Add crushed garlic and curry powder then stir for 30 seconds. Pour in pureed tomatoes, coconut milk and salt then bring to a boil. Reduce heat to medium, cover and simmer for about 10 minutes or till the sauce thickens a little. Add chopped vegetables and simmer until vegetables are soft to your liking and the liquid has reduced and thickened naturally.

These winter warmers are nourishing and delicious and we have made them often and like all cooks, we have varied them to suit our taste at the time.
